Ingredients
- 12 chicken wings
- BUFFALO SAUCE: 50 ml Tabasco, 25 ml vinegar, 50 g melted butter, 4 tbsp rub
- BLUE CHEESE DIP: 5 tbsp buttermilk, 120 g blue cheese crumbled, 1 tsp rub, 15 g chives
- RUB: See SALT, PEPPER, GARLIC RUB recipe
Instructions
PREPARATION:
- Soak two handfuls of wood chips in water for 30 mins.
- Cut the chicken wings into two pieces at the joint and discard the tip.
- Season the chicken wings in the rub – set aside.
- Place the seasoned chicken wings on the Deluxe Grilling Pan.
- BUFFALO SAUCE: In a bowl mix Tabasco, vinegar, cayenne pepper and melted butter.
- BLUE CHEESE DIP: In a bowl mix blue cheese, buttermilk, rub and chopped chives. Whisk well until mixture is smooth – set aside.
AT THE GRILL:
- Preheat the grill to 230 °C. Then set to SMOKEBOOST (82-95 °C)
- Place the Deluxe Grilling Pan on the preheated grill.
- Close the lid and let them grill for 12-15 mins – gently brush with the BUFFALO SAUCE – then turn and cook for a further 12-15 mins. When they have reached a core temperature of 75 ºC and when they have achieved good colour – they are ready.
- Remove from the grill and let rest and serve with BLUE CHEESE DIP.
