Cedar Plank Smoked Salmon

Ingredients

  • 500 g salmon filet, 1 tbsp rub
  • GARLIC BUTTER: 1 large garlic clove, 30 g parsley, 50 g butter (melted), 1 tsp rub, 1 lemon
  • RUB: See SALT, PEPPER, GARLIC RUB recipe

PREPARATION:

  1. Soak 1 Western Red Cedar Wood Plank in water for at least 1 hr.
  2. Ensure that any small bones are removed from the fish. Pat dry with paper towels.
  3. Gently remove the skin from the salomon.
  4. Brush the filet with oil and season with rub.
  5. GARLIC BUTTER: Peel and crush garlic, chop parsley and mix with melted butter and rub, zest and squeeze the lemon in and mix.
  6. Insert the Weber connect prope into the salmon to monitor your cook.

AT THE GRILL:

  1. Preheat the grill to 230 °C. Then set to 200 °C.
  2. Place the soaked Western Red Cedar Wood Plank over the heat. Gently sear both sides until the plank begins to crackle.
  3. Place the plank on the grill and add the salmon directly on the plank. Cook for 10-12 mins.
  4. Brush the salmon with GARLIC BUTTER and cook 4-5 mins.
  5. Remove the plank with the salmon and brush GARLIC BUTTER over the fish – let rest to reach desired core temperature.
