Ingredients
- 2 tortilla wraps
- TOPPING: 180 g cubed bacon, 1 spring onion, 1 red onion, 250 g crème fraîche, 250 g cheese (grated), 1 tsp rub, 1 whole nutmeg
- RUB: See SALT, PEPPER, GARLIC RUB recipe
Instructions
PREPARATION:
- Place the tortilla wraps on a cutting board.
- To make the topping, dry fry the bacon cubes on a griddle until the fat renders out and they are golden-brown. Drain on kitchen paper.
- Prepare the onions and thinkly slice – set aside.
- Spread the crème fraîche over your tortilla wraps, leaving a little border around the edges. Scatter the onions, dot with the bacon slices and sprinkle liberally with grated cheese.
- Season with rub and grated nutmeg.
AT THE GRILL:
- Preheat the grill to 230 °C. Then set to 200 °C.
- Place the pizza stone on the grill and preheat for 5 mins.
- Shuffle the tortilla wraps onto the pizza paddle – then slide onto the preheated pizza stone. Bake with the lid closed for 3-5 mins, or until the tortilla wraps are crisp and the cheese is melted.
- Once cooked remove the tortilla wraps from the pizza stone and use a pizza cutter to slice them into portions.
