Mixed Braaied Vegetables

Ingredients

  • 350g courgettes
  • 350g brinjal
  • X1 large red or yellow pepper
  • Extra-virgin olive oil
  • 1 ¼ coarse sea salt
  • ¾ teaspoon freshly ground black pepper

Instructions

  1. Prepare the braai for direct cooking over medium – high heat 200 degrees to 260 degrees Celsius
  2. Lightly brush the vegetables on both sides with oil and season evenly with salt and pepper. Working in batches, if necessary, braai the vegetables over direct medium-high heat, with the lid closed, until nicely marked from the grate, turning as needed. The courgettes will take about 4 minutes, the brinjal will take about 10 minutes, and the pepper 12-14 minutes. Remove the vegetable from the braai as they are done, and cut into bite-sized pieces
